This is a fun idea! I should point out that the Institute is accredited - and an impressive prep school to put on a resume to boot, so most classes can be taken for college credit.
Social Science - Jake teaches a Psychology class. Ororo could probably take that... looks like she's not got a ton of classes, really.
Science - Probably add Advanced Physics if we have Advanced Chemistry. Maybe Anatomy and Physiology?
Foreign Language - Ororo speaks French and Arabic.
Does the Institute have actual art classes? They should!
Finally, this was going to come up later, but since we're altering the class roster for 07-08, we might as well do it now. Josh is going to be moved to the faculty section shortly, and he'll be working out a deal with Columbia to get credits for teaching at Xavier's. He's going to be part grad student, part student teacher... *handwave* but it keeps him around and a part of the Institute still. Chatted with Toni and he'll be taking over Biology and Genetics - if Hank's too attached to Genetics, he could do the aforementioned A&P.
Josh is also interested in helping out with power training somehow...

Oh, and I have another idea.
It might not be a bad idea to have students who are still at the Institute decide which classes they're taking and post that somewhere. Just as RPG fodder. :)

Which makes me wonder, do classes go year round at the Institute or is there a summer vacation? I assume most PCs stay at the Institute over the summer even if there are no classes.

OK. Modified as follows: Added Psychology and Applied Psychology (aka “Con man 101”), courtesy of Jake. Added Advanced Bio and Advanced Physics, courtesy of Toni and Silas. I figure Advanced Bio can include anatomy & physiology if it wants to. Added Arabic, courtesy of Ororo. Warren will wrestle her for the French class, he needs the money. Which reminds me… added Warren teaching an Economics seminar, aka Investing for Dummies. Swapped Josh in for Bio and Genetics. My guess is Hank still wanders in and does guest lectures from time to time for Josh’s Genetics class, though.
Re: student schedules – yah, note the “Students” column. If students post their rosters, I’ll update. For that matter, teachers can sit in on classes if they want, too… Warren might take ‘ro’s Arabic class, for example.
Re: summer classes, etc. – my basic theory about the Institute is that by its nature it demands a lot of personal investment in each student, which means it can afford to offer a very personalized schedule. So, basically, classes run whenever we want them to. Handwave, handwave, handwave.
Re: art – sure. There’s plenty of classes not on this list. Who teaches art, though?

Bobby's schedule (Some of these are summer classes, some are next semester; he's trying to catch up) English lit Calculus Applied Psych Physics Economics Comp Sci Team Combat Tactics Telepathic Resistance
He's also helping TA Physical Power Use and Martial Arts And Hank forces him to give demonstrations in his Thermo class. In fact, Bobby is convinced Hank only teaches Thermo in order to hound him.

This might not mean anything, but, realistically, wouldn't it make lots of sense for the school to offer Spanish? xD Just a suggestion considering the rate at which the US is starting to become bilingual.

A general note re: Spanish, Art, Typewriter Repair, AP English, C Programming, and all other classes not on the above list -- my answer is "yes, the Institute offers it if somebody wants it, but who teaches it?"
Cause it's hard to RP about a class if you don't know who is teaching it.
This can be NPCs, of course, so feel free to make up an NPC Institute teacher who teaches a particular class and add it to the NPC board.

Toby -- added. Also, a note about "Mutants and Politics" -- we kinda dropped that thread, but I'm assuming the Tobester got his letter published and got his A, and is sticking around for a second term of the same seminar... which is fine with Warren, who makes it all up as he goes along anyway.
Incidentally, just to clarify something for everyone about "mandatory"... what I meant was that everyone has to take a semester of it at some point, not that everyone should take it every semester. Y'all probably knew that, though.

Alright, here goes (if I happen to be just blubbering nonsense please do slap me, everyone- I tend to be shockingly uninformed, or simply stupid on certain RL topics ((and most of yez have had more school to deal with)))
Christopher will be offering to teach:
Computer Programming (levels: basic, intermediate, advanced; years: 2-4)
Digital Video (levels: basic, intermediate, advanced, AP [only years 3 and 4]; years: 1-4)
Introduction to digital communication tools and basic computer software (levels: basic; years: 1-4)
The years category signifies when a student can take the class, any level above basic requires the previous level's completion.
Really, he is qualified, and willing, to teach anyone anything about computers, but these would be the classes he would initially teach, any student is allowed to request a computer-related class.
Additionally, he will be tutoring French, seeing how he is French, but has not obtained a degree required to teach it.
P.S. Seeing how Chris has already been added (what did I say about the talent of not being in the know?), I guess it would be a good idea to call it all one thing, and then just decide which sub-class or whatever the student wishes to take. The above ones are really just guidelines...
